It creates a thermal break that stops condensation on contact and brings those wild temperature swings under control. We go with closed-cell for metal buildings because it bonds right to the panels, doesn't absorb moisture, and adds some structural rigidity to boot. For some projects we'll do a combo — closed-cell on the walls for moisture protection and open-cell on the ceiling where you want cost-effective thermal mass without the moisture concern.
